Lotte Hotel
The Lotte Hotel, Seoul, has reopened its Korean restaurant Mugunghwa, on the 38th floor of the main building with the aim of globalizing Korean cuisine. Mugunghwa has positioned itself as a representative fine-dining restaurant for local cuisine.
The new Mugunghwa serves authentic Korean food with a modern flair based on the traditional table-setting of Banga, used by Korean noble families. It also features a collection of 40 different wines to accompany the Korean dishes, and food-pairing services from wine sommeliers and tea experts.
It offers a course menu based on the formal Soban table-setting, without an à la carte menu. The course menu is composed of amuse-bouche, cold appetizer, porridge, a fish dish, a grilled dish and dessert. Soban table-setting serves 3 to 5 dishes on a large show plate. Referring to recipe books “Si Ui Jeon Seo” written in 1900 at the end of the Joseon Kingdom and “Korean Cuisine” published in 1942, Mugunghwa adapted the traditional food presentation into a Western-style course menu, which serves one course after the other, in order to break the monotony of the Soban table-setting.
