Lets Make Causa Limena, Shall We?

As the year of 2008 recognizes the potato (Embassy row Jan. 7.), The Korea Times introduces an authentic potato dish cooked and enjoyed daily in different nations around the world.

Causa Limena is a mashed yellow potato pancake stuffed with fish, chicken or vegetables from Peru, where the potato originated several thousands years ago.

The history of Causa Limena traces back to the early 1900s when Peru was at war, the Peruvian Ambassador, Marcela Lopez explained. People in villages prepared it to feed soldiers on the front-line.

Ingredients

2 yellow potatoes

1 can tuna (Alternatives are shrimp, chicken, vegetables)

Chopped onion

Chopped pepper

1/2 tbsp Lemon juice

1 tbsp Vegetable oil

Mayonnaise

Salt

Duration: 30-40 minutes

Mash the cooked potato with salt, oil, pepper and lemon juice

Prepare cooking foil. Rub vegetable oil onto the foil, then spread the mashed potato.

Stuffing preparation: dry canned tuna and mix it with chopped onion and pepper. Add salt. Shrimp, chicken or vegetables can also be used.

4.

On the flat potato, spread mayonnaise and cover it with the stuffing.

5.

Roll it carefully.
