Ambassador hotels feature Michelin chef

Ambassador Group is featuring award-winning chef William Ledeuil at gala dinners at Grand Ambassador Seoul on Nov. 9 and Novotel Ambassador Seoul Gangnam on Nov. 11.

The dinners are in celebration of the 130th anniversary of Korea-France diplomatic relations, and Ledeuil's overarching theme will showcase French cuisine using Korean ingredients.

At Grand Ambassador Seoul, he will present sea scallops and crab with Jeju mandarin; steamed fresh lobster with lemongrass and red curry sauce; seabream and abalone with seaweed butter and citrus-flavor bouillabaisse sauce; and Korean beef tenderloin steamed in low temperature with grilled tamarind and "umeboshi," or Japanese apricot.

The dessert will be white chocolate and wasabi ice cream, passion fruit and banana and crystallized apple with "umeshu," of Japanese apricot liquor and caramel ice cream with caramelized pecan nuts served with coffee or tea.

At Novotel Ambassador Seoul Gangnam, the chef will feature fresh herb tempura with mushroom cappuccino; sea scallops and sea urchins with wasabi and oyster cream; lobster stew with shellfish and "shiso" butter and Korean black rice; seabream fillet with lemongrass stick, clam juice and green curry; grilled hanwoo beef with mostardo sesame kimchi; and crystallized Shingo pear with Jeju mandarin and white chocolate and wasabi ice cream for dessert, served with coffee or tea.

Each meal will be served with a couple of prominent wines. At Novotel, guest will find Billecart Salmon Extra Brut, Francois Mikulski Meursault Cru Les Charmes, 2015 Chpoutier Hermitage Chante Alouette, Chateau Haut Batailley and Kressmann Grande Reserve Sauternes 2014.

At Grand Ambassador, guests can order Billecart-Salmon Extra Brut NV; Philippe Foreau Domaine du Clos Naudin Vouvray Sec, Loire; Vacqueyras ‘UN Sang Blanc 2010, Domaine le Sang des Cailloux Rhone; Rasteau 2007, Domaine Gourt de Mautens, Rhone; and Muscat de Beaumes-de-Venise 2013, Domaine des Bernardin, Rohne.

Chef Ledeuil graduated from the prestigious cooking school, Ecole Superieure de Cuisine Francaise, and received a Michelin star in 2008.

He was named Cook of the Year in 2010 by global dining guide Gault&Millau. He also took care of the state dinner hosted by French President Francois Hollande during his visit to Korea in 2015.

The gala dinners will be at the Grand Ballroom in Grand Ambassador Seoul and Campagne Hall in Novotel Ambassador Seoul Gangnam.
